Craving a fresh and light meal on a hot afternoon? Salads are a great summertime staple that you can whip up in a short amount of time, combining fresh flavours and crisp textures. Here are five tasty salad recipes to enjoy whenever!

Classic Caesar salad

A popular salad dish, this recipe was invented by Caesar Cardini, an Italian chef in Mexico in the 1920s. The original recipe included romaine lettuce, garlic, croutons, Parmesan cheese, boiled eggs, olive oil and Worcestershire sauce. However today, any combination of these ingredients will make for a delicious fresh salad. Follow these recipes for different variations of the classic Caesar.

Pasta salad

This dish is incredibly light and versatile. Pasta salads can be served at barbecues, elegant dinner parties, family picnics, or as a grab-and-go lunch. Choose any type of pasta and stir in cooked vegetables, meat, fish or whatever fancy, and serve cold. Browse here for more delicious pasta salad ideas.

Seafood salad

If you are craving the beach and fresh seafood, try a simple platter of seared, boiled or grilled shellfish, adding a touch of salt, lemon, pepper, olive oil, and fresh greens. Pair the dish with a loaf of bread to soak up the juices and an ice-cold beverage to wash it down. Look for more inspirationhere.

Chicken salad

Tired of the usual grilled or fried chicken on its ownThen pair it with savoury and flavourful vegetables such as avocado, dried tomatoes and fresh corn and a light citrus dressing. If you are feeling adventurous, try adding in walnuts, raisins, green apples, tarragon or bacon bits. You could even put it into a sandwich if you’re a bit more hungry!

Bean salad

Bean salads are brilliant! Try chickpeas for a hearty and earthy flavour, mixing in sweeter ingredients such as grated carrot or sliced celery sticks, and a spice kick like roasted chili or cumin. For green bean salads, try a spicy Thai recipe, by adding in slices of pomelo and zucchini, dressed with a blend of garlic, dried chilies, sugar, lime juice and fish sauce. Black beans are best paired with homegrown flavours such as cilantro, green jalapeños and fresh corn, topped with smoked paprika and cottage cheese. For a Mediterranean flare, try white cannellini beans with green olives, fresh tomatoes, cucumber and feta cheese, drizzled with lemon juice, vinegar and honey, served over lettuce cups.
